If you want your fix of fresh delicious Mexican in a few easy steps, this dish is for you! I serve this on top of my cilantro lime cauliflower rice, and a nice dollop of fresh guacamole. I promise, it's even better than chipotle, and more delicious as left overs. It's also so easy to throw together. I recommend making it as part of your weekly meal prep.
